Simone grew up in Etobicoke and got her degree in chemical engineering from the University of Ottawa. Marrying her dairy farmer husband, she embraced rural life, joined Jersey Ontario, became president, and is active in community events, including the Fergus Fall Fair. Simone is an education worker in a local public school. Her political journey began when she ran for township councilor in 2006, which led her to become involved in the Township Environmental Committee and a local union representative.
